Scallop Potatoes

Ingredients

  • 2 cloves of garlic
  • finely chopped onion
  • 4 cups cream
  • 1 tsp salt and pepper
  • 3 lbs potatoes, peeled and sliced
  • thyme
  • 8 ounces swiss chees, grated
  • bread crumbs
  • melted butter

Preparation

Step 1

Preheat oven to 400 degrees. Grease 2 quart baking dish with butter. Bring cream to boil Add salt and pepper. add potatoes, adding more cream to cover potaotes. Simmer until they are barely fork tender. Saute onion and garlic.

With large spoon, transfer 1/3 of the potatoes with cream into prepared dish, forming an even layer. Top with 1/3 of the cheese, and continue layering, ending with the cheese. Add crumbs mixed with butter. Place on baking sheet and roast until golden and bubbly, about 30 minutes.

Let sit for 5 minutes.
