Ingredients

  • 2 large organic bananas
  • 1 1/2 cups shredded coconut
  • 1 heaping tablespoon protein powder of your choice

Preparation

Step 1

Preheat oven to 350F.

Divide each of the quarters into two parts, shaping them into discs, about a 1/2-inch thick, and place onto the baking sheet.

These cookies are a very versatile canvas. You can add in any number of ingredients to create variety. Just remember not to exceed about two tablespoons of add-ins, or your cookies will not stay firmly together. Some of the things i’ve added include mini-chocolate chips and raisins.

These cookies can also be made a day or two ahead, and kept in the fridge. Reheat gently under the broiler.
