Sour Dough English Muffins

I usually double.
Can also make cheese muffins by adding 1 c sharp shredded cheddar or add cinnamon and raisins for spicey muffins.

Ingredients

  • 1/2 c starter
  • 1 c milk
  • 2 3/4 c plain flour
  • 1 tbs sugar
  • 3/4 tsp salt
  • 1/2 tsp soda
  • 3 tbs cornmeal

Preparation

Step 1

Combine starter, m ilk, and 2 c flour. Cover and leave at room temperature overnight. Add 1/2 c flour, sugar, salt, and soda. Mix and turn onto floured board. Knead with remaining 1/4 c flour for 2-3 minutes. Roll dough 3/4 " thick and cut with biscuit cutter. Place muffins about 1 " apart on wax paper dusted with cornmeal. Sprinkle tops with remaining cornmeal and cover with a second sheet of wax paper. Let rise for 1 hour. Bake in lightly greased electric skillet at 275* for 8-10 minutes.
