Ingredients
- 1/2 cup shortening or margarine
- 1 cup sugar
- 2 eggs
- 3/4 cup mashed ripe banana
- 11/4 cup sifted all-purpose flour
- 3/4 tsp soda
- 1/2 tsp salt
Preparation
Step 1
Cream shortening or margarine and sugar until fluffy. Add eggs, one at a time, beating well after each. Stir in banana. Sift together the dry ingredients; add to banana mixture; mix well. Pour into greased banana loaves pan. Bake at 350˚F (177˚C) for 30 to 35 minutes. Let cool 10 to 15 minutes and remove from pan. Wrap well in cellophane; excellent to freeze.
