Cranberry Oatmeal Cookies

Nice Cranberry, Pecan, Coconut, Oatmeal cookie with chunks of white chocolate.

Ingredients

  • 3/4 cup unsalted butter, room temp.
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 large egg, room temp.
  • 1 tbs corn syrup
  • 1 tsp pure vanilla extract
  • 1 3/4 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup dried cranberries
  • 1/2 cups steel cut oats
  • 1/2 cup pecan pieces slightly toasted
  • 1/2 cup coconut slightly toasted
  • 3/4 cup white chocolate coarsely chopped

Preparation

Step 1

Set oven to 325.

Beat the butter and sugars at medium speed until light and fluffy, about 2 minutes. Scrape the bowl, add the egg, corn syrup and vanilla. Beat for 1 minute on medium speed. Mix in half of the flour on low speed until thoroughly mixed. Briefly mix in the remaining flour until thoroughly combined about 1 minute. Add in the baking soda and salt and beat on low speed until well blended. With a wooden spoon, stir in the cranberries, pecans, coconut, oats and chocolate. Mix well.

Drop teaspoon full of dough onto un-greased cookie sheet. Bake for 16 minutes, or until brown. Let cool on cookie sheet a few minutes, then transfer for wire rack to cool completely.
