Ingredients
- 1/2 lb. oyster mushrooms (Pleureotis ostreatus) I used pink ones, because I grow them in the living room
- 3 T ground flax seed mixed with 6 T water (sub for egg)
- 4 T blue corn meal
- 4 T flour and nutritional yeast blend
- 1/2 t pepper
- 1/2 t salt
- 1 t Old Bay
- 1/2 t smoked paprika
- 1/2 t chipotle
- ground walnuts
- add nut milk till it's a good consistency for coating
- 4 Tblsp. vegetable or olive oil (optional...these can also be baked at 350F for 10 minutes one side, turn over and bake for 5)
Preparation
Step 1
Cut the stems and roots off the oyster mushrooms. Then slice them into bite-sized bits, like oysters, if you like.
Beat the flax seed mixture briefly with a fork or whisk. Add in all the other ingredients except the oil.
Heat the oil in a skillet. (or bake in oven as above)
Dip bite-sized pieces of mushrooms into the batter and place them in the
skillet, a few at a time. Turn them over when they turn brown, then remove
the cooked pieces to a rack covered with paper towels (to drain the oil).
I have an excellent recipe for vegan aioli, but sometimes I'm lazy, so I just mix organic veganaise with fresh pressed garlic from my garden.
