Ingredients
- 1 lb lean beef steak, cut into 1-omch chunks, or lean ground beef
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1/2 of each green and red pepper, chopped
- 1/3 cup corn niblets (canned or frozen)
- 1/3 cup tomato paste
- 1/2 cup beef broth
- 2 tbsp chilli powder
- 1 tsp dried oregano
- 1 tsp cumin
- 1/2 tsp hot pepper flakes
- 2 cans (14 oz) red kidney beans (undrained)
Preparation
Step 1
In a 4 L saucepan, sauté beef chunks in oil until browned. Add onion, garlic, peppers and corn. Sauté 3-5 minutes, until softened. Add chopped tomatoes, tomato paste, broth and seasonings. Simmer over medium heat for 15 minutes. Add red kidney beans and heat through.
