Artichoke, Roasted Pepper, & Olive Pasta Sauce
This is a no-cook sauce ( that can also be heated. )

Ingredients
- garnish :
- 8 ounces rigatoni pasta
- 2 Tablespoons olive oil
- 1 finely chopped garlic clove
- 14 ounce jar of marinated artichoke hearts,
- drained and chopped
- 1/2 cup roasted red peppers, coarsely diced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/2 cup fresh basil, cut into thin strips
- 1/2 cup ( 2 ounces ) crumbled feta cheese
- all ingredients need to be at room temperature,
- if a no-cook sauce is intended
Preparation
Step 1
Boil rigatoni, and meanwhile, combine all ingredients except the garnish items. Drain pasta, pour sauce over, add garnishes.
