Artichoke, Roasted Pepper, & Olive Pasta Sauce

This is a no-cook sauce ( that can also be heated. )

Ingredients

  • garnish :
  • 8 ounces rigatoni pasta
  • 2 Tablespoons olive oil
  • 1 finely chopped garlic clove
  • 14 ounce jar of marinated artichoke hearts,
  • drained and chopped
  • 1/2 cup roasted red peppers, coarsely diced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/2 cup fresh basil, cut into thin strips
  • 1/2 cup ( 2 ounces ) crumbled feta cheese
  • all ingredients need to be at room temperature,
  • if a no-cook sauce is intended

Preparation

Step 1

Boil rigatoni, and meanwhile, combine all ingredients except the garnish items. Drain pasta, pour sauce over, add garnishes.
