Ingredients
- Sift CAKE Flour and measure 1 1/4 cups. Add to sifter with 1/2 cup sugar and sift four times. Return to sifter and set aside
- In a large glass bowl, separate 16 eggs. You can throw the yolks or make noodles with them!
- Add to egg whites: 1 1/2 teaspoon Cream of Tartar, 1/2 teaspoon salt, 1 teaspoon Vanilla and 1/4 teaspoon Almond Extract. Beat until whites form soft peaks. Add 1 1/3 cups sugar a third cup at a time and beat well each addition.
- Sift flour mixture over egg whites in four additions. Mix on LOW when adding flour. When complete put batter in an Angel Food Cake Pan. Take your flat spatula and make a circular motion around the pan from inside out to rid air bubbles.
- Bake in a preheated 350 degree oven on lowest rack

Be sure rack is lowest setting. Bake for 45 minutes. Cake will be dry on top. Cool upside down. Be sure it is completely cooled before removing from pan. Use flat spatula around edge, turn onto plate and enjoy plain or like our family with strawberries and ice cream!
