Fettucine with Orange, Mint, & Parmesan Sauce

Ingredients

  • 16 ounces fettucine
  • 6 Tablespoons butter
  • 2 Tablespoons finely chopped orange zest
  • 1 Tablespoon shredded fresh mint leaves
  • salt & pepper to taste
  • 1/2 cup orange juice
  • 1/2 cup grated parmigiano ( Parmesan ) cheese

Preparation

Step 1

Put fettucine on to boil. In a saucepan, at medium-high, melt the butter. Add and blend orange zest, mint, and orange juice. Add salt and pepper to taste. Cook the sauce down to 2/3 of the initial volume, until slightly thickened. Remove sauce from heat, pour over drained fettucine, and garnish with the cheese.
