Ingredients
- 1 1/3 cups cornmeal
- 1 1/4 cups flour
- 1 tsp salt
- 1/2 tsp baking soda
- 2 cups buttermilk
- 2 eggs
- 4 tbsp butter
Preparation
Step 1
1. place cornmeal, flour, salt, and baking soda in a bowl
2. mix buttermilk and eggs (Mix milk and vinegar and let sit for 10 minutes then add eggs to mixture and stir if not using buttermilk)
3. add wet ingredients to dry ingredients then stir in melted butter. stir.
4. pour batter on lightly greased pan or griddle. flip when surface bubbles appear. Serve with maple syrup or regular pancake syrup.
Notes: Jori's notes: Easy and really delicious - dense, but very filling. Served with maple syrup, and then also with jam - jam was better. Froze and reheated great. Would be good with savory toppings as noted below -
