CHOCOLATE PECAN BARS

Got this from a Robin Hood recipe book.

Ingredients

  • CRUST:
  • 2 cups flour
  • 1/3 cup sugar
  • 2/3 cup softened butter
  • FILLING:
  • 6 squares semi sweet chocolate
  • 1 1/2 cups corn syrup
  • 1 1/2 cups sugar
  • 4 eggs, slightly beaten
  • 1 1/2 tsp vanilla
  • 2 1/4 cups chopped pecans
  • DRIZZLE:
  • 2 squares semi sweet chocolate

Preparation

Step 1

CRUST:

Combine flour, sugar and butter. Beat on medium speed or with pastry blender till coarse crumbs. Press firmly into a 15" x 10" jelly roll pan. Bake at 350 for 15 minutes.

CENTRE:

Heat chocolate and corn syrup over low heat till chocolate is melted. Remove from heat. Stir in sugar, eggs and vanilla. Stir in pecans. Spread over hot crust and bake at 350 for 25-30 minutes. Cool in pan on rack.

DRIZZLE:

Melt chocolate over hot water. Drizzle over top. Cool. Cut into bars.
