Healthy Recipe: Butternut Squash Soup

Ingredients

  • 8 slices of bacon, cut crosswise into 1/4-inch strips
  • 2 1/2 lb. butternut squash, peeled, seeded and cut into 1/2-inch dice
  • 1 small granny smith apple, peeled, cored and cut into 1/2 dice
  • 1 1/2 tablespoons finely chopped fresh sage leaves
  • 1 teas. kosher salt
  • 1/2 teas freshly ground black pepper
  • 4 cups low-salt chicken or vegetable broth
  • optional toasted almonds or pumpkin seeds

Preparation

Step 1

cooked apple and butternut squash till tender in the broth then put into a blender till smooth crumble bacon into pieces and put on top.
