Cheesy Grits with Sausage & Vegetables

Ingredients

  • 1/2 cup quick cooking grits
  • Kosher salt
  • 3 slices white American cheese
  • 1/2 cup shredded cheddar
  • 8 ounces frozen pork breakfast sausage
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh thyme
  • 6 ounces mushrooms, halved (quartered if large)
  • 6 ounces cherry tomatoes, halved
  • Freshly ground black pepper
  • 1 scallion, trimmed and chopped

Preparation

Step 1

Bring 2¼ cups water to a boil in a medium saucepan. Whisk in grits and a pinch of salt and reduce heat to low. Partially cover and cook, stirring occasionally, until thick and creamy, about 10 minutes. Remove from heat and stir in cheeses.

While grits cook, sauté sausages according to package instructions.

Warm oil in a medium skillet over medium-high heat.
Add thyme and mushrooms and cook, stirring occasionally, until mushrooms start to brown, about 3 minutes. Add tomatoes, season with salt and pepper,and cook 1 more minute, until lightly browned. Stir in scallion and cook 1 minute. Divide grits among 4 plates; serve with sausages and mushroom mixture.
