Ingredients

  • 1 T. olive oil
  • 2-4 lbs boneless pork shoulder cut into 3/4 inch pieces
  • 1 medium onion chopped
  • 1 t. ancho chile powder
  • 1 t. chili powder
  • 1 t. cumin
  • 1 bay leaf
  • salt & pepper
  • 1 . t. oregano
  • 3 T. olive oil

Step 1

Cut up onion and pork.
brown up pork and add salt & pepper while cooling.
Put in onion with last batch while browning.
Add chili powders and seasonings and enough water to just barely cover.
Bring to boil and cover with pressure cooker lid. Bring to boil and keep at the 2nd ring for
about 25-30 minutes. Turn off heat and let temp come down to no rings.
Heat skillet with a couple T. Olive oil. Add pork and fry the pork until crispy.
Make polenta with sharp cheddar (2 cups milk to 1 cup water and 1 cup grits/polenta)
Add 1+cup shredded white cheddar.
Serve polenta, pork and sauce from pressure cooker.
