Delightful as an appetizer or as a pairing with soup. Can be made ahead , frozen and then baked. Wonderfully versatile.
- pizza dough, from pizza store
- or supermarket or make your own
- 2 stalks celery,diced
- 1/2 onion, diced
- 12 mushrooms, sliced
- 1 1/2 pounds sweet sausage, casing
- olive oil
- 2 cups shredded mozzarella cheese
- Grated parmesan or locatelli cheese
- egg wash
In a pan, heat olive oil and add celry and onion. Cook for 5 minutes till they begin to soften. Add mushrooms and continue cooking till all veggies are very soft.
In another pan brown your sausage crumbles. Drain the meat on paper towels. Combine the meat and vegetable mixture. COOL.
Roll out your pizza dough. Spread sausage mixture all over dough , leaving 1 inch edge all around. Now evenly add your shredded mozzarella, then sprinkle with grated parmesan.
Fold in sides of dough and begin ot roll up burrito style. Make some slits in top of dough. brush with egg wash. Bake at 350 for 45 minutes. let rest 15 or so before slicing. Delicious!!
**You can freeze this bread as soon as you roll it up if you wish. Just make slits first. To freeze, place roll in aluminum foil that has been lighlty sprayed with nonstick spray. Wrap tightly then tightly again in plastic wrap. Before proceeding just take out 1/2 hour before going into oven.
