Potato-Corn Chowder

Ingredients

  • 1/4 cup butter
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 1 cup celery, chopped
  • 2 cloves od garlic
  • 3 lbs. of red potaotoes, chopped
  • 3 cans of chicken broth
  • 1 (10 ounce) of corn
  • 2 cups of heavy cream
  • 1 TBS thyme
  • 1 tsp salt
  • 1 tsp pepper

Preparation

Step 1

In pot melt butter over medium heat. Add onion, pepper, celery and garlic and cook until vegetables are slightly tender. Add potatoes, broth and corn and bring to a boil over medium - high heat. Reduce heat, and simmer for 20 minutes. Serve.
