Ingredients

  • 12 Corn Sopes
  • 1 Tbsp Vegetable Oil
  • 1 (16oz) Can Refried Beans
  • 7 oz Salsa either red or green
  • 1/2 Cup onion
  • 1/4 Cup fresh cilantro
  • 1/4 Cup crumbled Cotija or feta cheese

Preparation

Step 1

Heat oil in large skillet over medium-high heat. Fry sopes on each side until golden brown. Press each in the middle to shape into a bowl, if necessary.
Heat beans in a saucepan over medium heat until warm.
Divide beans equally about 2 tbps between each sope and spread to cover. Drizzle each with salsa, onion, cilantro and cheese.
