Yogurt Cheese

  • 2 quarts low-fat plain yogurt

Preparation

Step 1

1. Place 4 layers of damp cheesecloth in a fine mesh seive or colander. Place the colander over a bowl.

2. Add yogurt and let it drain overnight in the fridge.

Herbed Spinach Yogurt Cheese Dip:
Into 1.5 cups of yogurt cheese, mix 2 cloves minced garlic, 1/2 cup fresh basil, 2 tsp avocado oil, pinch sea salt and 1 pkg frozen spinach, thawed and well drained. Mix well and chill. Serve with crudites and baked pita chips.

Cake Frosting:
Into 2 cups yogurt cheese, mix 1/2 cup sifted confectioner's sugar and 1/2 tsp best quality vanilla. Mix well and frost cake.
