Ambrosia Cake or "Pig Pickin Cake"

Ingredients

  • Cake:
  • 1 Butter Recipe Yellow Cake Mix
  • 3 eggs
  • 1 cup water
  • 1/2 cup butter
  • 1-4oz can Mandarin Oranges, drained
  • Icing:
  • 1 large pkg instant vanilla pudding mix
  • 1-16oz can crushed pineapple
  • 1-8oz container whipped topping

Preparation

Step 1

Cake:

Combine cake mix, eggs, water, and butter. Mash drained Mandarin Oranges and add to cake batter, mixing in well. Pour batter into greased and floured 9 x 13 cake pan. Bake for 30-35 minutes at 350 degrees or until cake is done in center when tested with toothpick. Cool cake completely.

Icing:

Blend pudding mix and crushed pineapple until thick. Add whipped topping and blend until well mixed. Ice cake and refrigerate at least 2 hours before serving. Store in refrigerator.
