Green Goddess Dressing

Ingredients

  • 1 clove garlic
  • 1 lg ripe Hass avocado, halved, pitted & peeled
  • 2 T cider vinegar or fresh lemon juice
  • 2 T peeled, seeded & grated cucumber
  • 2 T chopped scallion
  • 1 T chopped fresh parsley
  • 1 T chopped fresh tarragon
  • 3/4 t salt
  • 1/4 t freshly ground black pepper

Preparation

Step 1

1. In a food processor w/metal blade attached, mince garlic.
2. Add avocado & vinegar; process until fairly smooth.
3. With motor running, drizzle in 2/3c H2O.
4. Scrape into a bowl & stir in cucumber, scallion, parsley, tarragon, salt, & pepper.
5. Cover surface of dressing w/plastic wrap to prevent browning; refrigerate until serving, up to 1 week.
6. Stir before using.
