Marge Clarkes Banana Bread

Ingredients

  • 1/2 cup butter
  • 1/2 cup vegetable oil
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 6 very ripe bananas mashed
  • 3 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon ground cloves
  • 1/2 cup mini choc chips- optional

Preparation

Step 1

Preheat over to 325.
Spray 2 loaf pans w/ baking spray (spray w/ flour).

Cream butter and sugar until light and fluffy. Add vanilla. Add bananas, oil. Mix well. In separate bowl mix together dry ingredients. Add to butter mixture and mix until flour incorporated. Don't over mix or bread will be tough. Stir in chocolate chips if adding.

Divide into the 2 pans.
Sprinkle w/ coarse sugar on top if desire (adds crunch.)

Bake. Check after 45 mins. Cook until toothpick comes out clean.
Cool in pans for 10 mins. Remove from pans onto cooling rack and allow to cool.
Freezes well.
