Ingredients
- Frosting:
- 2 cups sugar
- 2 cups water
- 1 cup cocoa
- 4 oz butter
- 2 eggs
- 2 tsp vanilla
- 2 cups flour
- 1 tsp salt
- 1 1/2 tsp baking soda
- 1 1/2 qt heavy cream
- 1 1/2 cup sugar
- 1 can cherry pie filling
- 1 can pitted cherries
- 2 oz melted chocolate
Preparation
Step 1
In a saucepan mix sugar, water and cocoa and bring to a boil. Boil 3 minutes and remove from heat.
Blend butter into saucepan and allow to cool completely.
In a mixer add saucepan mixture and add eggs and vanilla.
Sift flour, salt and baking soda and add gradually to mixer until smooth.
Grease and flour a 9" springpan. Bake cake in oven at 350 for 70 minutes.
Cool and remove from pan. Slice cake in 3 layers, brush bottom layer with kirsch.
Frosting:
Whip 1 1/2qt heavy cream. Add 1 1/2 cup sugar. Whip until stiff. Remove 2 cups and mix with 2oz melted sweet chocolate. Spread 1 cup chocolate mix on top of the bottom layer. Set 2nd layer ontop. Spread 2nd layer with 1 cup chocolate mix. Fill piping bag with whipped cream and pipe out 2 circles, fill circles with pie filling. Place 3 layer ontop. Ice entire cake with whipped cream. Make rossettes and decorate with chocolate and cherries.
