Lemon Bars

Yummy lemon bars with a shortbread crust.

Ingredients

  • Crust:
  • 1 cup flour
  • 1/2 cup butter
  • 1/4 cup sugar
  • Pinch of salt
  • Topping:
  • 1 cup sugar
  • 2 tsp flour
  • 1/4 tsp baking powder
  • 2 beaten eggs
  • juice of 1 lemon (about 4 tbl)

Preparation

Step 1

Crust:
Combine all ingredients in a bowl and mix well. Press into an un-buttered 9x9 pan. Bake at 350 for 20 minutes.

Topping:
Combine all ingredients in a bowl and mix well. Pour over crust. Bake at 350 for 25 minutes. Sprinkle with icing sugar if desired.

Cool and cut into sqaures.
