Ingredients
- 14 oz. smoked beef sausage, halved and sliced
- 44 oz. beef stock
- 1 cup chopped carrot
- 1 cup chopped celery
- 1 small diced onion
- 4 minced garlic cloves
- 1 tsp. red pepper flakes
- 1 tsp. salt (more to taste)
- 1/2 tsp. black pepper
- 1 cup half-and-half
- 8 oz. light cream cheese
- 2 cups shredded sharp cheddar

Preparation
Step 1
1. Heat crock pot on high. Add sausage, beef stock, carrot, celery, onion, garlic red pepper flakes, salt and pepper. Cook on high 4 hours.
2. Add half-and-half, light cream cheese and shredded cheddar. Whisk until there are no longer any clumps of cream cheese. Continue cooking for 2 hours.
