Salmon with Four-Citrus Sauce

Ingredients
- 4 Salmon Filets
- 3 Medium Shallots
- 1 Cup Fresh Dill
- 1/2 Cup Fresh Squeezed Lemon Juice
- 3/4 Cup Orange, Grapefuit, Lime Juice
- White Wine (Sauvignon Blanc)
- 1/3 cup Butter Cooked Rice
- Orange or Grapefruit slices
- Kosher Salt
- Coarsely Ground Black Pepper

Step 1
Prep
Finely chop the shallots
mince fresh dill
Squeeze 1/2 cup lemon juice
Add 3/4 cup of other citrus juices
Season salmon with kosher salt, coarsely ground black pepper, minced dill
Cook
Heat large pan over medium-high heat
Melt Tablespoon of butter
Add salmon skin down, cook 2 minutes
Cook 2 minutes other side
When flesh side is slightly seared remove salmon and reserve on plate
Cook shallots until soft
Add white wine to deglaze plan, stirring with a wooden spoon
Reduce to thin syrupy consistency
Add juices, reduce in half
Add dill to pan and add salmon back to pan to warm
Serve on a plate or bed of rice with sauce spooned over.
