Marietta's Chicken

Ingredients

  • 1/4 c. olive oil
  • 2 T. butter
  • 3/4 c. shallots
  • 2 garlic cloves pressed
  • 1 1/2 c. chicken, cubed
  • 2 c. parsley chopped
  • 3/4 c. dry white wine
  • 1 c. italian dressing
  • 1/2 c. heavy cream
  • 1/2 c. romano cheese
  • 1/2 c. sundried tomatoes
  • 1 lb. penne or bowtie pasta

Preparation

Step 1

Start water in pan to get boiling for pasta.
Sautee shallots an garlic in olive oil and butter until clear. Add tomatoes. Mix wine and broth together and add 1/4 of mixture to the shallots, garlic and tomatoes. When adding chicken start pasta in boiling water to cook. Add chicken when little juice remains and saute 4 minutes. Add 1/2 of wine and broth remaining and simmer 5 minutes. Add parsley and remaining wine and broth and bring to a boil. Turn down heat and add cream and Romano cheese to thicken. Serve with pasta.
