- Cereal Balls:
- Cereal
- Hemp, flax or chia seeds
- dried fruit
- Nut butter
- Grecian Eggs
- eggs
- Greek yogurt
- Spicy Scramble
- firm tofu, cut into cubes
- olive oil
- turmeric
- Pumpkin 'Cakes
- Whole grain pancake mix
- canned pumpkin
- fresh or frozen berries
- Power Bagel
- 100 % whole grain English muffin or bagel
- Avocado, mashed
- Hard boiled egg, sliced
- Chillin' Oatmeal
- 1/3 c steel cut oats
- 1/3 c low fat plain yogurt
- 1/3 c milk
- sliced fruit for topping
Preparation
Step 1
Cereal Balls:
Toss together dry cereal and seeds. Add dried fruit and stir in peanut butter. Roll into balls and freeze for 20 mins to set.
Grecian Eggs
Whisk two tablespoons yogurt and two eggs. Cook in a skillet.
Spicy Scramble
Toss cubed tofu, olive oil and turmeric and cook in a skillet until beginning to brown, then slightly mash.
Pumpkin 'Cakes
Add a scoop of canned pumpkin to whole grain pancake batter and cook as usual. Cook fresh or frozen berries on the stove; as they break down they become syrupy. Pour over cakes for a healthy topping.
Power Bagel
Top bagel or English muffin with mashed avocado and a sliced hard boiled egg.
Chillin' Oatmeal
Stir oats, yogurt and milk together and put in fridge the night before. Eat cold or warm up, topped with sliced fruit.
