Mexican "Fried" Ice Cream

Ingredients

  • 1 pint vanilla ice cream, softened in microwave on defrost 30 seconds
  • 3 cups Corn Flakes
  • 1 teaspoons ground cinnamon
  • 1 tablespoon melted butter
  • 1/2 cup brown sugar
  • Honey, for drizzling

Preparation

Step 1

Crush cornflakes and then add remaining ingredients. Spread on cookie sheet and bake 350 degrees for 8 minutes and let cool. Form ice cream into small balls and roll into cornflake mixture and return to freezer to set. Sprinkle with cinnamon and drizzle with warm honey.
