Ingredients
- 2 chicken breast (bone in or out, skin on skin off
- the pan does not care)
- salt and pepper to taste
- 2 tablespoon flour
- 2 tablespoon of butter (clarified)
Preparation
Step 1
Preheat oven to 400F.
Put the flour in a flat plate add salt and pepper to taste, mix well and spread evenly across plate.
Rinse chicken breast in water and dry with paper towel. Then dredge in the flour mixture. Coat both sides.
Heat butter in an oven ready fry pan on medium high heat.
When butter is sizzling add chicken (skin side down if you have skin)
Cook skinless chicken breast 3 minutes per side. For skin on chicken breast cook skin down four minutes and 2 minutes the other side.
Put fry pan in hot oven and cook 10 minutes until done to your liking. Bring out of oven and let rest for 5 minutes.
