Roasted Cauliflower

Ingredients

  • 4 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1 large head cauliflower, separated into florets
  • 1/3 cup freshly grated Parmesan cheese
  • 1 tsp kosher salt
  • Table grind black pepper to taste
  • 1 tbsp dried parsley, crumbled or 1 tbsp chopped fresh parsley

Preparation

Step 1

1.Preheat the oven to 450 degrees. Grease a large casserole dish with Cooking Spray.
2.Place the olive oil, salt, pepper and garlic in a large resealable bag. Add cauliflower, and shake to mix. Pour into the prepared casserole dish.
3.Bake for 30-35 minutes, stirring halfway through or until cauliflower is tender. Top with Parmesan cheese and parsley, and broil for 3 to 5 minutes, until golden brown.
