Eggplant Catalan

Ingredients

  • 1 eggplant, sliced
  • salt
  • 1 tablespoon olive oil
  • 1 tablespoon basil
  • 1/2 teaspoon oregano
  • 1/4 teaspoon rosemary
  • 4 cloves garlic, minced
  • 3 tablespoons parmesan cheese

Preparation

Step 1

1. Salt eggplant. Let stand 20 mins. Arrange on sprayed pan.

2. Mix 1 tb oil, herbs and garlic. Sprinkle on eggplant. Sprinkle with cheese.

3. Bake 20-25 mins at 425.

Notes: Might serve with spicy marinara
