Ingredients
- 3 lbs green beans, trimmed
- 2 cups stale bread, torn into small cubes
- 3 TBSP olive oil
- 3 green onions, sliced thinly3 TBSP corn starch
- 2 1/2 cups whole milk
- 1/8 tsp nutmeg
- 8 oz cheddar cheese, shredded
- 1/4 cups finely grated parmesan cheese
Preparation
Step 1
1. Heat covered sauce pot of boiling salt water. Preheat oven to 375. Add green beans and cook 2 minutes. Drain well and set aside.
2. In food processor, pulse bread crumbs. Transfer to medium bowl along with onions and oil. Toss and set aside.
3. In a saucepan whisk together cornstarch and ½ cup milk. Heat until smooth. Add nutmeg and ½ tsp each of salt and pepper. Slowly whisk in the remaining milk. Heat until boiling, whisking frequently. Reduce the heat to med-low. Stir in cheeses slowly. Stir in green beans until well coated.
4. Transfer to a baking dish. Top with the reserved bread crumb mixture. Bake 25-30 minutes until crumbs are golden brown.
