Coconut Oatmeal Cookies

Delicious butterscotch oat coconut cookies.

Ingredients

  • 1 cup butter or margarine
  • 1 cup white sugar (heap a bit)
  • 1 cup brown sugar
  • 2 medium eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 can flaked coconut
  • 2 cups oatmeal (quick cooking)
  • 1 cup pecan pieces
  • 1 cup butterscotch morsels

Preparation

Step 1

Preheat oven to 350 degrees.
Cream butter and sugars.
Add eggs and mix well.
Add flour, baking powder, baking soda, vanilla, and salt.
Fold in coconut, oats, pecans, and morsels by hand.
Drop by teaspoonfuls onto ungreased cookie sheet.
Bake for 10-12 minutes.
