Ingredients
- 3 lb. boneless chuck roast
- 1 cup barbecue sauce
- 1/2 cup apricot preserves
- 1/3 cup chopped green peppers
- 1 small onion, chopped
- 1 tbsp. mustard
- 2 tsp. brown sugar
- 12 sandwich rolls
Preparation
Step 1
1. Cut roast into quarters. Place in greased slow cooker.
2. Combine barbecue sauce, preserves, green peppers, onion, mustard, and brown sugar. Pour over roast.
3. Remove beef from sauce with slotted spoon. Place in large bowl. Shred with 2 forks.
4. Add 2 cups sauce from slow cooker to shredded beef. Mix well.
5. Pile into buns and serve immediately.
6. Reserve any remaining sauce for serving over pasta, rice, or potatoes.
