Brie Aux Herbs on Croute

Ingredients

  • 1 lb white mushrooms
  • 3 shallots
  • 1 oz butter
  • 2.2 lbs brie
  • 1/2 lb pastry dough
  • 1 egg, beaten
  • 1 tbs total: frish tarragon, parsley, chives, chopped
  • lemon juice

Preparation

Step 1

Peel mushroom and coat with lemon juice. Saute shallots, mushrooms, and herbs. Cut brie in half horizontally. Spread mushroom mixture over brie. Top with other half. Roll out 2 circles pastry dough, 1 cirlcl 2" larger than brie, 2nd 4" larger. Place brie on small circle, cover with larger, seal dough with egg wash. Bake 15-20 minutes at 350. Cool, serve soft.
