Simmered Daikon

This is Glenn's version of Furofuki Daikon compiled from several different sources, and still a work in progress. This recipe is for 4 people (3 pieces of daikon each).

Ingredients
- Daikon
- 2 Cups water
- 1 teaspoon package dashi
- 2 Tablespoons sugar
- 1 Tablespoon sake
- 1/4 teaspoon salt
- 4 Tablespoons soy sauce
- 2 Tablespoons mirin
Preparation
Step 1
1. Combine all ingredients in a separate bowl and stir thoroughly to dissolve the dashi, sugar and salt.
2. Peel and slice daikon to 1" width rounds.
3. Place daikon in pressure cooker and add broth to cover.
4. Pressure cook manually on high for 25 minutes.
5. Once pressure cooking completes, wait 10 minutes before releasing pressure and serving.
