Ingredients

  • Tostadas:
  • 2-15 oz cans vegetarian chili
  • 1 pkg tostada shells
  • Alfalfa sprouts
  • Lg cucumber, chopped
  • 1/2 c shredded cheese
  • Sm can green chili peppers
  • Taco sauce
  • Corn and Black Beans:
  • Onion, chopped
  • (2 T oil)
  • 2 c frozen corn
  • 15 oz can black beans
  • (Cumin, salt/pepper to taste)

Preparation

Step 1

Heat chili in saucepan over med heat. Cover and set aside. Garnish each tostada shell w/ingredients as desired.
Corn and Black Beans:
Heat oil in skillet and sauté onion until tender. Add corn; sauté for 2 min. Add black beans, cumin and
salt/pepper to taste. Heat thoroughly. Serve alongside tostadas.
