Slow Cooker Chicken and Corn Chowder

This nicely seasoned chicken and corn chowder is easy to prepare, and the slow cooker makes it a great meal for a busy day. This recipe is easily doubled for a larger family.

Ingredients

  • 1 can (10 3/4 ounces) cream of potato soup
  • 1 can (10 3/4 ounces) cream of chicken soup
  • 1 cup diced, cooked chicken
  • 1 can (12 to 15 ounces) whole kernel corn, drained
  • 1 cup chicken broth
  • 1/4 cup diced red bell pepper or roasted red bell pepper
  • 1 can chopped mild green chile
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon dried leaf thyme
  • 1 cup milk

Preparation

Step 1

Combine the soups, chicken, corn, chicken broth, bell pepper and chile, salt, pepper, and thyme in a 4 to 6-quart crockpot. Cover and cook on LOW for 4 to 5 hours. Add milk and cook for about 30 minutes longer, or until hot. Serves 4 to 6.

I seldom actually take the time to write a review, which is bad on my part because I am a self-taught chef and really should give credit where credit is due. I know you can't really go wrong with a crockpot meal, as it's always adaptable to your own tastes. This is the case with this recipe. Luckily I had all the ingredients on hand, so that's why I chose to make this one today. I really dislike when people write a review based on changes they made instead of following the recipe to a ""T"" and THEN write a review. I may be a tad guilty of this myself this time, but I did follow it to a ""T"". I thought this was a fantastic dish. Very flavorful and a good comfort meal in cold weather. So, I used a little more than one cup of chicken. I cubed about a breast and a half from medium sized breasts. I would never used canned chicken for this. I used about a 1/2 cup of fresh red bell pepper. (Roasted would be better but I didn't take the time to roast the bell pepper) Since the recipe called for corn, red bell pepper and diced green chiles, I decided to try a can of the Green Giant Steam Fresh Mexican Corn (which contains those ingredients for the most part). That was the equivalent of one cup of corn. I love bacon and onion so I cooked up 6 slices of bacon and diced about a quarter of an onion and added that to the crockpot. But let me say first, I tasted the liquid before I added the bacon and I was very pleased. I honestly do recommend this recipe to anyone! It's simply delish! Excellent comfort food for those cool fall or winter evenings. I served it with some garlic butter topped, fresh baked bread sticks and the family loved it! Enjoy! This one is going into my comfort food recipe box for future use. Double the recipe and you can feed an army. YUM! Thank you for sharing this one. This is incredible! Hi I'm from Venezuela and the first time I tried your recipes was with the red snapper and bread crumbs that literally blow everybody's mind. I never cooked red snapper before and that fish is actually very common in my country. All my family were licking the plate with that dish.Then I made this chowder for my wife and friends and that was it, if you like to know what heaven tastes like, then I'll cook one of your recipes! I didn't put 5 stars on this because the spices in it don't blend in that well and everything is canned. I'd rather use fresh stuff so it wasn't easy to make a canned recipe. But thank you for making my mouth water!

I hate to disagree with everyone else who wrote reviews, but I did not find this recipe particularly appetizing. I was looking for something my son could make easily in a crockpot. I tried it based on the glowing reviews. It was easy, but not something I would ever make again. I have eaten one serving for lunch. There is a lot leftover. I hate throwing out food, but the thought of having to eat another meal makes me nauseous. I hate that I wasted my money on the ingredients."

Simple and great flavor. I made this soup for the first time two years ago for the super bowl. I now base this recipe for my own version. What I do is cut up 1 whole onion and a pound of bacon. Cook 1/2 of bacon at a time as there is a lot. Drain bacon grease and add 1/2 of the onion with bacon still in pan and saute till transparent. Repeat process and throw it in the crock and continue to follow recipe as directed, excellent little twist to this already good soup.

I modified: creamed corn and whole corn. baked chicken. canned potatoes (not soup). canned cream of broccoli soup.
Soup came out great, it was fast, super easy, and good, even ate the left overs which I rarely do, and it was actually better a few days later. I would definitely make this w/o a doubt again.. just need to thicken sauce a little and some more spices and possibly veggies.

Excellent comfort food! I made this recipe and the family LOVED it. I used the butter and a little extra chicken. As far as peppers, I used roasted red since I love the taste they have (especially combined with the green chiles).

This recipe is simple to make (assuming you can open a can) and it will be well received. I hope you enjoy as much as we did!

Soothing comfort food! Like most crockpot recipes (or soups & stews of any kind), you can add other ingredients. I used a can of creamed corn in place of the whole corn and added some diced onion. At the end of the cooking time, I put some grated cheese in when I added the milk.

Great recipe! I made it (did add some butter as well)and it really came out great. I used leftovers from rotisserie chicken and matched the chowder with some cornbread muffins - yummy!

Simple and easy. I doubled this recipe and added one stick of margarine when I added the milk. I also turned the crock pot up on high for that last 30 minutes.
