Ingredients
- 1 Cup dried mung beans, rinsed and drained
- 1.5 Cup fresh corn or 1 cup frozen
- 1 Bunch green onions finely chopped
- 1/4 Cup lime juice
- 1/4 Cup gomashio (Japanese seasoned salt)
Preparation
Step 1
1. Soak beans in cold water for 5 hours or overnight
2. Place beans in saucepan and cover with cold water. Bring to a boil. Reduce heat to medium-low and simmer 15-20 until soft. Drain and rinse under cold water.
3. Transfer to bowl and stir in corn, green onions, gomashio, and lime juice. Season with salt and pepper.
Background: Gomashion is a Japanese seasoninig made of sesame seeds and salt that can have other spices in the mix.
