Baked Beans (Veg)

Ingredients

  • 1.5 Cup dried kidney beans
  • 2 Medium onions, thinly sliced
  • 1 8 oz jar medium salsa
  • 1/3 Cup dark brown sugar
  • 3 Tablespoon yellow mustard

Preparation

Step 1

1. Soak beans in 6 cups of water overnight. Drain, reserve soaking liquid.

2. Coat Dutch oven with cooking spray heat on low. Add onions, cover and cook 15 min or until browned. Stir in 1 cup of soaking liquid. Simmer for 5 min scraping up onion bits.

3. Stir in remaining ingredients and 5 cups of water. Cover and cook 1.5 hrs. Uncover and simmer for 1 hr or more until sauce has thickened.
