Roasted Juliet Tomatoes with Garlic and Herbs

This recipe is not in measurements. I recommend a stainless steel pan, not a coated pan as the acid will ruin the finish.

Pureed in a processor, this tomato dish make a wonderful appetizer on a crostini with grated parmesan on top.

Ingredients

  • Juliet tomatoes (enough to form a single layer in roasting pan)
  • Salt & Pepper to taste
  • The following ingredients will be sprinkled evenly over tomatoes.
  • Pureed garlic or finely diced
  • Chopped Parsley
  • Green onions, sliced
  • Basil, sliced
  • Drizzle olive oil over tomatoes.

Preparation

Step 1

400 degree preheated oven. Bake for approx. 45 minutes stirring at least once.

These roasted juliets make a wonderful pasta sauce if pureed in a food processor.

This sauce freezes well for winter use.
