Roasted Juliet Tomatoes with Garlic and Herbs
This recipe is not in measurements. I recommend a stainless steel pan, not a coated pan as the acid will ruin the finish.
Pureed in a processor, this tomato dish make a wonderful appetizer on a crostini with grated parmesan on top.

Ingredients
- Juliet tomatoes (enough to form a single layer in roasting pan)
- Salt & Pepper to taste
- The following ingredients will be sprinkled evenly over tomatoes.
- Pureed garlic or finely diced
- Chopped Parsley
- Green onions, sliced
- Basil, sliced
- Drizzle olive oil over tomatoes.
Preparation
Step 1
400 degree preheated oven. Bake for approx. 45 minutes stirring at least once.
These roasted juliets make a wonderful pasta sauce if pureed in a food processor.
This sauce freezes well for winter use.
