Coffeecake Muffins

Ingredients

• Spice Mix:
• 1 1/2 cups all-purpose flour
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 4 tablespoons butter
• 1/2 cup granulated sugar
• 1 egg
• 3/4 cup milk
• 1/2 teaspoon vanilla extract
• 1/2 cup packed brown sugar
• 2 tablespoons all-purpose flour
• 1 teaspoon cinnamon

Preparation

Step 1

1. Preheat oven to 400 degrees F.

2. Mix together dry ingredients. Make a well in the center.

3. Beat butter, sugar and egg together well. Mix in milk and vanilla extract. Pour into well. Stir just to moisten. Spoon part of batter into greased muffin tin 1/3 full. Sprinkle spice mix over top. Top with remaining batter. Filling 2/3 full.

4. Bake for 20 to 25 minutes.

Notes: Overbaked these so likely cook's error. Good flavor though so should try again. Made way too much sugar topping - make only half next time. Also made only 8 fairly-small muffins
