Apple Upside-Down Cake

Apple upside down cake with cinnamon and apples and brown sugar and butter. This apple upside-down cake is a delicious cake to make for a special weekend snack or make it for your holiday dinner dessert and serve with ice cream.

Ingredients

  • 1/2 cup butter
  • 1 cup light brown sugar
  • 2 tablespoons evaporated milk or cream
  • 2 cups sliced apples
  • 1 1/2 cups sifted flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup shortening
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract

Preparation

Step 1

Mix together 1/2 cup butter, 1 cup brown sugar, and 2 tablespoons evaporated milk or cream; spread in bottom of an 8-inch square baking pan.

Arrange sliced apples on the brown sugar mixture. Sift together the flour, baking powder, cinnamon and salt.

Cream shortening with sugar; beat in egg the add sifted ingredients alternately with 1/2 cup milk and the vanilla extract.

Pour batter over apples. Bake at 350° for 35 to 45 minutes, until cake is done.

Fabulous with one caveat. I just baked this during Super Bowl and my husband dug into it as soon as it came out of the oven! Since another reviewer commented it was too sweet for her, I cut the amount of butter, brown sugar (used dark) and cream in half, melted the butter in the pan (chose a round cake pan), then mixed in the cream and sugar; it provided the perfect amount of topping. To prevent the apples from browning while I prepared the batter, I sifted the dry ingredients together (twice) first, creamed the shortening and sugar, beat the egg separately, and added the vanilla to the milk BEFORE slicing and arranging the apples. Then I just quickly beat everything together as directed and poured it over the apples. We only had Granny Smiths, so I peeled and sliced up two. The slight tartness was a delightful contrast to the sweetness of the brown sugar. The cake was moist, light and flavorful. Will definitely make again!


Excellent and easy! Mmm, something about this recipe makes it seem more complex, flavorwise, than the ingredients would indicate. Used real cream, and paired it with homemade almond ice cream. Very yummy!

I made this cake for the first time. It was delicious, but a little too sweet for me. Next time I will decrease sugars.
