Ingredients
- 3/4 cup unsalted butter
- 1 1/4 cups brown sugar
- 3 tablespoons dark corn syrup
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1/4 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1 tablespoon cider vinegar
- 1 tablespoon vanilla
- 1 egg
- 1 1/3 cups oats
- 1 1/4 cups whole wheat flour
- 2 cups dried fruit, chopped
- 1 cup chopped pecans, or walnuts
Preparation
Step 1
1. Heat oven to 350. Line two baking sheets with parchment
2. Cream together butter-vanilla. Beat in egg.
3. Add oats-nuts; stir to combine.
4. Drop by tablespoons onto baking sheets. Bake until beginning to brown around edges, but soft in middle, 14 minutes, reversing pans midway through. Transfer to rack to cool.
Notes: These were great, but hard to time for the right texture. Used white whole wheat flour and left out the nuts.
