Scalloped Eggplant

  • 1 Medium Eggplant, peeled and cubed
  • 1/2 Cup Minced Onion
  • 2 tsp. Salt
  • 1 1/2 Cups Crumbled Soda Crackers
  • 1 tsp. Salt
  • 1 1/4 Cups Milk
  • 2 Tbs. Butter, melted
  • Pepper



Step 1

Preheat oven to 375 degrees. Boil cubed eggplant with onions and 2 tsp, salt in small amount of water for about 5 minutes. Should be tender but not mushy. Drain. Spread half of cracker crumbs in greased baking dish. Add eggplant and onions and sprinkle with salt and pepper. Top with rest of cracker crumbs. Pour milk into corners of baking dish to cover bottom. Pour butter on top. Bake uncovered for 45 minutes.
