Thai peanut dressing

Ingredients

  • 1 cup peanut butter
  • 1 cup coconut milk
  • 1 tablespoon pre-made Thai red curry paste
  • 1 fresh Thai chile, stemmed, seeded and sliced
  • 2 tablespoons freshly squeezed lime juice

Preparation

Step 1

In a saucepan, stir together the ingredients. Heat over a low flame, uncovered, stirring frequently, about 5 minutes, until sauce has thickened. Do not allow the dressing to come to a boil. Remove from heat, and allow to cool completely. If the consistency is too thick, add coconut milk, 1 tablespoon at a time, until desired consistency is achieved.
