Ingredients
- 5 1/2 C. chicken broth
- 30 oz. cauliflower
- 1 onion, chopped
- 6 Tbs. butter
- 1/2 C. flour
- 2 C. milk
- 1 1/2 lb. velveeta cheese
Preparation
Step 1
In large soup pot simmer cauliflower in chicken broth until just tender.
In separate pot saute chopped onion in 6 Tbs. butter. Add flour to make a paste. Whisk in milk and stir until thickened.
Add milk mixture to broth, stir well.
Stir in 1 1/2lb. velveeta till melted.
