Ingredients
- 2 cups flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup sugar substitute, splenda
- 1/4 cup butter, softened
- 1/2 cup egg substitute
- 1 1/2 cups mashed banana, about 3 bananas
- 1/4 cup lowfat yogurt
- 3 tablespoons dark rum
- 1/2 teaspoon vanilla
- 1/2 cup coconut
- 1 tablespoon coconut
- 1/2 cup powdered sugar
Preparation
Step 1
1. Heat oven to 350.
2. Combine flour-salt.
3. Beat sugar and butter until well-blended. Beat in eggs, one at a time. Add banana-vanilla, beat in until blended. Beat in flour until moist. Stir in 1/2 cup coconut. Spoon into sprayed 9" loaf pan, sprinkle with coconut.
4. Bake 1 hour, or until tester tests clean. Cool 10 in pan on rack, remove from pan and place on rack over waxed paper (or foil or plastic wrap.
5. Whisk together sugar and lime juice, drizzle over bread while still warm. Cool completely.
Notes: Original recipe called for 1 cup sugar and 2 eggs (substituted Splenda and eggbeaters).
