Ingredients
- 2 bacon slices, chopped
- 1 lb boneless, skinless chicken breasts, but into 1 inch pieces
- 1 small onion, chopped
- 1 14oz can low-sodium, fat free chicken broth
- 3 14.5 oz cans diced tomatoes with green chiles, undrained
- 1 15oz can black beans, rinsed and drained
- 1/2 tsp chipotle seasoning OR 1-3 chipotle peppers (heat to your liking)
- 4 oz shredded sharp cheddar cheese (1 cup)
- Sour Cream and sliced Jalapeno optional
Preparation
Step 1
1. In a large, heavy pot, cook bacon over medium heat until crisp. Transfer bacon to a plate lined with paper towels to drain. Add chicken to pot, saute 4 minutes. Remove chicken and keep warm.
2. Add onion to pot, saute 2 minutes. Add broth, tomatoes, beans and chipotle seasoning (or peppers), bring to boiling. Reduce heat to medium-low. Return chicken and bacon to pot: simmer, uncovered for 20 minutes, stirring occasionally.
3. Serve in bowl. Top with cheese and sour cream and jalapenos, if desired.
